Why blend the two
Broccoli and kale are both crucifers and both carry the same class of compounds, but they are not
identical, and blending them gives you a broader profile than either sprout on its own. That is the
whole idea behind Ultra. Both are grown under controlled conditions and carefully dried, and the
broccoli sprouts in this blend are organic.
The number worth knowing
A 1997 paper in the Proceedings of the National Academy
of Sciences by Fahey, Zhang and Talalay reported that three day old sprouts of certain broccoli
and cauliflower cultivars contain 10 to 100 times higher levels of glucoraphanin, the compound that
converts to sulforaphane, than the corresponding mature plants. That is the finding, stated the way
