The number worth knowing
A 1997 paper in the Proceedings of the National Academy
of Sciences by Fahey, Zhang and Talalay reported that three day old sprouts of certain broccoli
and cauliflower cultivars contain 10 to 100 times higher levels of glucoraphanin, the compound that
converts to sulforaphane, than the corresponding mature plants. That is the finding, stated the way
