Wheat is two products in one bag, and the second one is where the money is. Sprouted short, it is a sweet grain sprout for breads, cereals and sprouted flour. Grown on in a tray, it becomes wheatgrass, and wheatgrass has an established, price-insensitive customer in juice bars, health retail and the powder trade.

Most growers who stock wheat end up serving both markets from the same purchase, which is a rare efficiency in this business. Sprouted wheat berries also go into retail products directly, and the bakery side of the market has grown steadily as sprouted grain labels have moved into mainstream stores.

Growing notes

Hard red or hard white wheat both sprout well; the choice usually comes down to what the end product needs. Wheat soaks quickly and it does not want a long soak, because a cereal grain left underwater goes sour fast. For grass, the tray is where attention goes: even seeding, good drainage and airflow, and harvest at the jointing stage before the blade turns fibrous. Penn State Extension places wheat inside the general 7 to 21 day window for tray production, which brackets both a short grain sprout and a full grass crop.
