Red Cabbage Sprouting Seeds for Commercial Growers
Red cabbage is the best-looking sprout we sell, and in a category where most product is white and green, that is a commercial argument, not a cosmetic one. The stems come in a saturated magenta purple that survives washing and shows through a clamshell. Chefs buy it for plate color. Retailers buy it because it breaks up a monotone shelf.
Flavor is mild and faintly peppery, closer to fresh cabbage than to a hot mustard, which means it goes into salad mixes and sandwich blends without taking them over. It also runs as a microgreen, and that is increasingly where the demand is.
Growing notes
This is a small brassica seed, so it wants the same discipline as broccoli: careful soaking, even hydration, and a room that does not drift warm. Penn State Extension groups cabbage with the other brassica microgreens that reach harvest fast, generally within about seven to eight days, which makes it one of the quicker turns you can put in a tray. In a vessel it runs on a sprout schedule of a few days.
