Lentil Sprouting Seeds for Commercial Growers
Lentil is the most efficient sprout most growers are not running. It germinates fast and evenly, it does not need a long soak like a large bean, it finishes in a couple of days, and it comes out with a firm texture and a mild, earthy flavor that works in salad mixes, wraps and warm dishes alike. For a small operation looking to add an item without adding complexity, lentil is the easiest yes in the catalog.
It is also a useful blend component. Lentil contributes body and a little chew without the strong flavor a radish or mustard brings, so it lets you build volume into a mix without changing what the mix tastes like.
Growing notes
Lentil sits between a small seed and a bean in behavior. Short soak, steady irrigation, and harvest early: most buyers want the root tail short, because a long tail turns fibrous and the whole product loses the crispness that made it worth buying. Penn State Extension places lentil inside the general 7 to 21 day window for tray production, though as a vessel sprout it is much faster than that.
- Cleaned and sized, with splits and stones removed. Split lentils will not sprout, and stones are a customer complaint you cannot talk your way out of.
