Cress Microgreens Seeds for Commercial Growers

Cress is the fastest flavor in this catalog. It germinates almost immediately, it is ready while other crops are still deciding, and it arrives with a bright, peppery heat that chefs use the way they use black pepper or a squeeze of lemon. If you need a crop that can go from seed to a restaurant order inside a week, cress is it.

It has a long history in the trade, which helps. Cress is one of the original microgreens and one of the original windowsill crops, so the name carries recognition with older chefs and curiosity with younger ones.

Growing notes

Cress seed is small and mucilaginous, so like chia it gels slightly on contact with water. Do not soak it, seed it thinly on a firm even surface, and mist rather than flood. Penn State Extension groups cress with the brassica-family microgreens that can be harvest-ready in roughly seven to eight days, and in practice cress often beats that. The failure mode is overwatering a dense stand, because a damp mat with no air movement is where trouble starts on any fast crop.

  • Clean, uniform seed. A mucilaginous seed cannot be rinsed clean after the fact, so the lot has to arrive right.
  • Untreated and grown for food use.
  • Germination figure and lot number with every order.

Cress goes out raw. FDA’s sprout requirements in 21 CFR part 112, Subpart M treat the seed as the primary control point, and every lot we offer passes ISS food safety screening before it is sold, with documentation available on request.
