Daikon Radish Sprouting Seeds for Commercial Growers

Daikon is the sprout for customers who want heat. It comes up with a clean white stem, a pair of bright green leaves and a peppery bite that reads as fresh rather than harsh, which is why it has a permanent place in Japanese cooking as kaiware and a growing place on American menus as a finishing green.

Commercially, it is a fast crop with a distinct flavor, and that combination is rare. A grower who already runs alfalfa or clover can add daikon and suddenly have something to sell to a chef rather than only to a grocery buyer.

Growing notes

Daikon is a radish, and radish is one of the most reliable seeds in this business. It germinates hard and fast, which is forgiving, but the speed is also the trap: it will outrun a room that is too warm and go leggy and soft. Keep it cool and keep the air moving. Utah State University Extension puts radish microgreens at roughly 42 grams per 1020 tray with no presoak, one to two days covered and eight to twelve days to harvest. In a vessel it finishes far sooner, on a normal sprout schedule.

  • Untreated and grown for food use. Most radish seed in commerce is treated garden seed. This is not that.
