Mizuna is the mustard for people who think they do not like mustard. The flavor is peppery but noticeably gentler than a red or brown mustard, and the leaf is the selling point: deeply serrated, feathery and unusual enough that it reads as a specialty item on a plate without any explanation. Growing notes

Mizuna is a brassica and behaves like one: uniform hydration, a cool room, and no overseeding. Penn State Extension lists mizuna among the brassica microgreens that can reach harvest in roughly seven to eight days, which puts it among the quicker tray crops, and it also runs as a conventional sprout on a much shorter schedule. Because the leaf is delicate, harvest and handling technique matter more here than they do on a sturdy kale.
